"Sortadella" Cheddar

Sorry for the inconvenience.  We decided to un-publish this recipe because there is some risk involved in aging an acid-coagulated cheese.  When a culture isn't added to the milk, there is no protection against ambiant and potentially unhealthy bacteria.

Of course there's risk. There's a risk of being hit by a bus, too. Life shouldn't be about being risk free, but about making one's own choice of whether to take the risk. I make raw milk cheeses and uncultured cheeses all the time, as did my grandmother and her mother before her--and probably before that. It's a "risk" I choose to take, just like the open kettle canning of jelly that I do. It's pretty sad that fear of lawsuits by people who won't take responsibility for their own choices, or fear of government intervention, must affect those of us who are responsible adults.

Could you please provide a link for the recipe for those willing to take the risk? Or provide a way to contact Steve?

I have a pot of 2 gallons on the stove to try it out, went to get the recipe and now I am stuck! I have had problems with a bad batch of rennet (read: a batch of rennet gone bad, it was good at one point), and thought it would be the perfect time to try the acid cheese and age it instead of feeding it to the dogs, since we are snowed in and under arctic blast. I would hate to try and reproduce it by memory. Given my Swiss cheese memory...

I think all cheese making/cooking/heck - living- has risk. I'm fine with you withholding endorsement, I understand you don't want to get sued, but I would find it unfair to withhold information from those interested in trying something new. I promise I won't sue you or Steve
